Seafood Soup

Look at all that deliciousness! Squid, scallops, shrimp!

Tonight I needed a break from having salad for dinner. We’ve eaten so much salad in the last month, I think I’m about to turn green  It’s been well worth it as we’ve both been achieving our weight and fitness goals, but it’s hard to eat only salads every night. So I wanted seafood, my favourite!

We decided on some sort of fish soup. Stopped off at the grocery store on the way home and just really threw together a pile of seafood and vegetables, not really sure what the outcome would be.

Came home and investigated some recipe sources and of course, there were key ingredients they called for that I did not have, so it was now a case of experimentation!

End result, not too bad at all! This is how I achieved the lovely meal you see in the photo above.

Step 1:
Peeled and sliced one large carrot
Peeled and minced 4 cloves of garlic
Washed and sliced 1 leek, omitting the white end and green leafy end
Diced 1 red pepper

Sautéed all of the above in a bit of olive oil, then added some vegetable broth (very little), some white wine, and about 1 cup of water, just so the vegetables were covered nicely and could soften.

Step 2:
Added 1 filet of Halibut cut into bit sized pieces
4 tubes of squid sliced into rings
1 – 450g package of large shrimp, peeled
About 10-12 medium scallops
Added some more wine, water and vegetable broth oh and fish sauce. Salt, pepper, saffron and dried Rosemary (recommend fresh!) all to taste and set to simmer.

Tasted not too bad at this point, so I added a bit more wine  and a packet of Knorr’s pasta seasoning, Roasted Garlic and Herbs.

Just shortly before serving I added 2 bunches of Shanghai Choy, green leaf part only. (Never used this before, so really this was experimental!)

Served a nice fresh baguette with the soup. Yum!
