Amy’s Breakfast Casserole

Simply delicious!

I can not take credit for this creation.  It is a recipe handed down to me by my absolutely wonderful friend Amy.  Amy served this at a brunch we had in Florida and it’s been a family favourite ever since!  So loved that my grandson will often ask, when up at the cottage “Nana, can you make Amy’s breakfast casserole?”

It’s become a great dish to make when you are hosting a large crowd for brunch!  And it’s easy to make ahead and bake in the morning!

Amy’s Breakfast Casserole

4 slices sour dough bread (or any favourite bread you enjoy)
1 lb ground sausage, casings removed
2 cups shredded Cheddar Cheese
1/2 cup shredded Parma/Romano Cheese
6 eggs
2 cups whole milk
Dash of salt and pepper

Spray a 9 x 13 oven proof pan with Pam.  Break slices of bread into bit size pieces and cover the bottom of the pan with the pieces.

Brown the sausage in a skillet.  Drain off grease.  Spread the cooked sausage evenly over the bread.  Cover the sausage with the cheese.

In a mixing bowl, beat eggs together until well blended.  Add 2 cups of milk and a dash of sale and pepper to the eggs and mix well until blended.

Pour the egg mixture over the bread/sausage/cheese.  Cover and refrigerate overnight or cook immediately at 350 degrees approximately 35-40 minutes, until firm in the middle and golden brown.

Serve immediately and with optional hot sauce!
